My youngest son always looked forward to the day AFTER Thanksgiving - anticipating this turkey recipe. Written recipe follows.

Recipe:

Broth from turkey
water for pot
3 14 ounch cans chicken broth (approx) for reconstituting. I prefer adding chicken broth rather than more water - (about 3 1/2 C or as needed)
1 lbs turkey (approx) meat from turkey carcass
1 C ea (I actually &quot;eyeball it&quot;) of diced green onions, minced carrots, &amp; diced mushrooms
1 C cream or half-n-half (or milk, etc)
2 large dollops of sour cream
SW Spice (or chili powder, chipolte') and salt &amp; pepper to taste

Directions:

Add water to large pot and add turkey carcass (bones and all) to pot. Simmer until meat falls from bone and broth forms. Cool to handle. Debone remaining meat from turkey. Return turkey broth deboned meat to stove and continue simmering adding chicken broth to reconstitute. Add vegetables and spices. Spoon in cream and sour cream. Simmer until tender and stir to combine.

Before serving, add homemade noodles (see below) and cook 3 minutes more.

HOMEMADE EGG NOODLES

4 whole eggs

Mix together the eggs, salt and flour until you have a stiff dough. I divide the dough in half and let it sit for about 10 minutes. Roll out thin like a piecrust.

5. He will sing in Houston at a family private party on October 26, 2007.

6. Angel will be honored at Memorial High School in McAllen November 1st at the parade, and on 2nd at the football homecoming game.

In her honour I prepared for my family (and you) one of her dishes, corned beef hash.  This is a family favorite.

Recipe:

6-8 medium red potatoes, chopped
1 very large sweet onion, chopped
1 can corned beef hash
salt &amp; pepper to taste
SW spice - optional (or chili power, chipolte, etc)
light flavored olive oil
pat of butter

Clean and cube potatoes and sweet onion uniformly in size; place in pan and drizzle light tasting olive oil w/pat of butter and mix it up.  Saute' on medium to low until the potatoes are crisp on the outside and fork tender on the inside, and the onion translucent, stirring often.

Add corned beef and mix, add spices to taste and adjust spices if needed.

Serve mounded on a plate topped wih an egg cooked to your liking.  I prefer the yolk running so it will drizzle with the potatoes and onions.

1/4 C (approx) mayonnaise - just for creaminess.

I also added a splash of the pimento juice while grinding.

Directions:
Cut the cheese into chute size pieces and give the pimento a rough cut (if you used whole). Alternate feeding the chute with cheese and pimento. I begin and end with cheese, then add just enough mayo for a creamy texture - but not overbearing. You don't want the mayo to override the flavors.

Serve atop crackers or stuff celery - use your imagination. It's good on top of dry toast, too. This is excellent to serve at parties. My kids like to swipe the cheesespread and make sandwiches out of them! Enjoy!

This recipe is in response to samsarajade's own sausage rolls! Mine are a little different and have a southwestern twist. Recipe follows (of course, I quadruple it for a bunch o' hungries):

1 pkg refrigerated crescent rolls (8 oz)
1/2 pound bulk sausage (I like Jimmy Dean)
2 stalks green onion, chopped thinly
SW spice to taste (or use chili powder)
handful shredded cheddar cheese
egg wash

Unroll dough on lightly floured surface pressing seams and perforations together (or as best possible - a few holes looks kinda cool). Add ingredients and roll up from long side; cut into 1/2 to 1 &quot; slices; Place cut side up in ungreased baking pan, brush on eggwash and bake at 375 degrees for 12 to 16 mins or until golden brown.
